  • 1 Cup oats, finely ground
  • .5 Cup whole wheat flour
  • .5 Cup white flour
  • .5 Teaspoon salt
  • .75 Cup egg substitute
  • 1 Cup sugar
  • .5 Cup unsweetened applesauce
  • 2 Tablespoon canola oil
  • .75 Cup Coca-Cola®
  • 1.5 Teaspoon vanilla
  • 2 Cup finely grated carrots
  • .5 Cup finely grated zucchini
  • .5 Cup raisins
  • .25 Cup chopped nuts (optional)

  1. Mix together dry ingredients. In a separate bowl,whisk together egg substitute, sugar, applesauce, oil, Coke®, and vanilla. Gently fold wet and dry ingredients together. Fold in grated veggies, raisins and nuts until just combined, being careful not to over mix. Spoon batter into a nonstick muffin tin and bake at 350 degrees for 20 minutes.
