A simple dressing made with Coca-Cola is the perfect complement to a delicious, fresh summer vegetable salad. This recipe comes from Chef Linton Hopkins, the James Beard Award-winning owner and chef at Restaurant Eugene and Holeman & Finch Gastropub in Atlanta, GA.


  • 2 Cup cherry tomatoes, halved
  • 2 Cup green beans
  • 2 Cup baby red beets
  • .25 Cup parsley, chopped (optional)
  • 16 Ounce Coca-Cola
  • 2 Teaspoon apple cider vinegar
  • 2 Pinch sea salt
  • 1 Pinch Fresh ground black pepper
  • .25 Teaspoon Lemon zest
  • 1 Teaspoon Lemon juice
  • 8 Tablespoon extra virgin olive oil
  • .25 Cup shallots, minced

  1. For the dressing: Combine Coca-Cola and apple cider vinegar in a boiler. Cook on high heat until sauce thickens to a syrup. Remove from heat and let stand until cool. For the salad: Toss vegetables, salt and pepper with olive oil. Plate salad and drizzle dressing over dish.
