These hardworking barbecue sauces work beautifully with meat, as a dipping sauce or even as a salad dressing. The key is to create the basic sauce — called Secret Ingredient Barbecue Sauce — and then play around with variations.

1. Secret Ingredient Barbecue Sauce

Can you guess what the secret to this rich, zesty sauce is? Yes, Coca-Cola! Baste the sauce on ribs or drumsticks, or get creative: we love it as a pizza sauce (top with shredded chicken and fontina cheese) or in pasta salad.

Ingredients

  • 2 teaspoons canola oil
  • 2 tablespoons finely minced onion (about ¼ onion)
  • 1 cup ketchup
  • 1 cup Coca-Cola
  • 3 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon liquid smoke (optional)

Directions

Warm a medium saucepan over medium heat. Add canola oil and onion and cook, stirring constantly, until onion is translucent, 2 minutes. Add in remaining ingredients, increase heat to high, and bring to a boil, stirring constantly. Then reduce heat to medium-low until sauce reduces and thickens, 7 to 10 minutes. Stir every 30 seconds or so. Remove from heat and let cool slightly. Serve immediately with pulled pork or other meats, or use in the recipes below.
