How are you celebrating this festive green holiday?

Attending a parade? Wearing green attire to avoid a pinch? Kissing a leprechaun? Or are you making your favorite thin mint shamrock-shaped cookies? In any case, this holiday makes me smile because it's the one time during the year when no matter what heritage you claim, you are full on Irish for the day.

Even though I adore corned beef hash, shepherd’s pie, and a mint chocolate shake, sometimes I need a healthy alternative that doesn't skimp on flavor. I bring you, Chicken Coca-Cola Life Stout Stew with Quinoa.

Think of this stew as the sexier sister of the traditional stout stew. What makes this stew better? I'll give you hint. Starts with C and has a green wrapper. Any guesses? Oh, you're good! That's right, Coca-Cola Life. This newly bottled cola is lower in calories and sweetened with natural sugars like Stevia leaf extract.

 But Coca-Cola Life is not just for sipping. Used in this healthy stew, it gives the stock an extra zing without weighing you down. Plus, with its green color, it's practically four-leaf clover approved.

  • 2 Tablespoon olive oil
  • 4 bone-in chicken thighs
  • 0.25 Cup all-purpose flour
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 yellow onion, diced
  • 0.25 Cup stout beer
  • 0.25 Cup Coca-Cola Life
  • 1 Sprig thyme
  • 1 Teaspoon Worcestershire sauce
  • 1 Tablespoon tomato paste
  • 3 Cup chicken stock
  • 4 Cup quinoa, cooked
  • chives (to garnish)
  • salt and pepper (to taste)

  1. In a large bowl combine, flour, salt and pepper. Roll the chicken thighs in the flour so that each are evenly coated. Preheat a large pot to medium-high heat. Add the olive oil to the pot and brown the chicken thighs, or about two minutes on each side. Remove chicken thighs from pot and set aside. In the same pot, add the carrots, celery, onions, garlic, salt and pepper. Cook over medium heat until softened, or about two to three minutes. Add stout and Coca-Cola Life to the pot and scrape down any of the brown bits on the bottom. Add the chicken, thyme, Worcestershire sauce, tomato paste, and chicken stock to the pot. Bring to a slight simmer, cover, and cook for about 1 hour. Check it and then let simmer for an additional 30 minutes, or until the chicken can be easily pulled apart. Place 1 cup of quinoa into a bowl. Put one chicken thigh on top and ladle the veggies and sauce over top. Garnish with chives.
