This fresh and healthy Middle Eastern salad has plenty of fiber from bulgur wheat and chopped veggies and plenty of flavor from fresh mint, parsley, green onions, and feta. An easy, no-cook side dish, tabbouleh is a delicious accompaniment to grilled chicken, fish, or shrimp.
2 cups bulgur wheat
2 cups water
2 teaspoons salt
2 tablespoons olive oil
juice of 2 lemons
2 teaspoons white wine vinegar
1 teaspoon black pepper
1 cup fresh parsley, chopped
1 cup fresh mint, chopped
3 green onions, chopped
1 red bell pepper, chopped
1 medium or 2 small cucumbers, chopped
1 cup of cherry tomatoes, cut in half
½ cup of feta cheese crumbles (optional)
Place two cups of bulgur wheat in a large bowl and cover with two cups warm water. Let sit for an hour or until water has been absorbed and bulgur becomes soft.Stir in salt, olive oil, lemon juice, white wine vinegar, and black pepper. Toss thoroughly. Chop vegetables and mix in. Add feta cheese, stir and serve.
