As soon as the mercury begins to dip, plenty of people reach for the slow cookers.

That's because nothing makes a home feel more comfortable in the fall than a pot roast or stew slowly simmering away in the kitchen.

What's more, creating meals with a slow cooker is astoundingly easy, assuming you have the luxury of time between the start and the finish of each recipe.

But the payoff is worth the wait.

All three of the recipes below require eight hours of cooking time after assembly, which means walking away from the pot is more than encouraged, it's necessary (and so is planning ahead).

If you arrange to start the cooker right before you leave for work in the morning, not only will you be greeted with a heavenly fragrance when you return, dinner's guaranteed to be a simple affair.

This is our own Coca-Cola-spiked riff off a hot street food trend. Korean tacos combine two cultures in one tortilla and taste deliciously savory, sweet and slightly pungent, all at once.

Though the eight cloves of garlic the recipe calls for might sound excessive, trust us. You'll like the way it turns out. And the fish sauce, also known as nam pla, is entirely optional, but adds an authentic flavor. You can find it in any specialty store that sells international foods.

Once the meat in this recipe is fully cooked, we recommend letting it cool before hand-pulling (or else using tongs and gloves). Then heat it back up right before service time.

How do we recommend you serve this beef? The variations are endless. But in the test kitchen, we served up a bowl of shredded meat with toasted soft wheat tortillas and condiments on the side, allowing eaters to construct their own (this recipe will likely serve a family of four reasonable eaters).

On the side, we served fresh cilantro sprigs, thinly sliced cucumbers and red onions marinated in seasoned rice wine vinegar and sprinkled with sesame seeds as well as julienned carrots, also marinated in rice wine vinegar. Kimchi, a fermented cabbage condiment standard in Korean food, also makes a nice addition.

Sweet and Spicy Hoison Spare Ribs

Hoisin is a Chinese dipping sauce with a salty-sweet kick. It can easily be found in any store specializing in Asian ingredients — and most grocery stores, for that matter. Find yourself with some left over? Try using it to glaze sweet potatoes for an interesting side dish, or brush it on pork chops or broiled salmon.

The Sriracha sauce called for in this recipe is also quite versatile. Sriracha is a spicy, bright-red, Thai chili sauce with a balancing sweetness to it. You can generally find it in larger grocery stores, and it's common at international foods markets.

Don't know what to do with the extra? Try mixing it with mayo as a sandwich spread or dip for fried shrimp or sushi. Or, mix it with ketchup for a spicy burger topping or a dip for french fries or tater tots. It's also excellent squeezed over tacos (such as the Korean beef tacos in the preceding recipe). Sweet, smoky and spicy, chipotle baked beans make a flavorful meatless dish. Feel free to adjust the level of spice to your personal taste (and go ahead and add cooked bacon if you're feeling carnivorous).
